Johnny Cash - One Piece At A Time
I loved this song when I was a kid. Still sounds fresh today. Very funny and Cash's delivery couldn't be better.

I just saw Justin Timberlake and Matt Morris sing "Hallelujah". I was very pleasantly surprised.

Lee Ann Womack - There Is A God
I don't really like Lee Ann Womack, and I don't really care for a whole lot of country music in general, but this song is excellent. They've been playing it on the XM Christian station ("The Message") lately, and I really like it. YouTube it. There are several good videos of it already.
