I'm going to attempt a macaroni and cheese with ham in it. I'm not sure what kind of vegetable to make yet.

Cheesy chicken and rice. And I'm baking up an acorn squash as well. I guess it's a yellow/orange meal.

I do LOOOVVEEE their crispy chicken, though. Several years ago when my mom still managed a store, I would go in for a twister (crispy chicken wrap) and potato wedges. Mmmm. mmm. mmm. Unfortunately, they don't fit into my current eating plan.

Gralan, since the 70s they've come out with more options. Their honey bbq wings and sandwiches are pretty good, too. (imo).

Hmmmm. I may have kfc for dinner tonight. lol .

The Macaroni and Cheese with Ham in it went over well. Tonight DH is making something with Scallops. Yum!

Last night I sauteed chicken breasts with leeks and rosemary in olive oil. Then added balsamic vinegar before serving with baby reds and asparagus.

I'm still thinking about tonight's menu. No 'inspiration' yet.

OK, I ended up 'making up' our dinner. By that, I mean I improvised. I browned ground round with onions and garlic, then added drained kidney beans and fire roasted green chilis plus chili powder (1T), cumin (1 1/2 t), oregano (1/2 t) and a bit of sugar (1t). Put that in a casserole and topped it with diced tomatoes. Then cooked cornmeal (3/4 c) in water (2 c) until it was thick and put that on top and backed all for 25 minutes at 400 degrees. That and a green salad and we had dinner. Very yummy.

Can I use your recipe? That sounds absolutely marvelous. I love blind cupboard cooking. Especially if it includes southwest items (cumin, green chile, etc.)

Here's a recipe I'm making this next weekend with Chicken tenders.
Soul Food -- Paper-bag BBQ Chix
Open a large and heavy paper bag (be sure there are no holes in it!)
Place it on its side on a large baking pan. With pastry brush, brush melted shortening over the inside of the bag, covering well. Place one 3-lbs chicken cut up into pieces in bag, skin-side up in a single later. Spoon BBQ sauce evenly over the chicken; fold the open end of bag over twice and secure with paper clips. I suggest resting it on a baking sheet.

Place pan in a COLD oven, then set the temperature control at 350, baking for 1 ¾ hours. Do not open the bag during the cooking time. Remove pan, slit bag, put on serving platter. Spoon sauce over the chicken and serve immediately.

Serve with hoppin' John or Lazy Susan beans and rice. Hot collards with malt vinegar goes pretty good with this, as does cornbread with bell pepper in it.

meatball sandwiches, no cheese, loaded with jalapenos and peppercini; toasted under a broiler. On Italian bread.

Just like I had as a 4th grader after piano lessons. Only today I do not run to 31 flavors and get a double sugar cone of bubble gum topped with rocky road. I figured then I got 4 taste treats in one. I also had the figure to handle it.


Now my diet should be hard tack with herring in winesauce.

Cauliflower Fennel Soup. It is absolutely the yummiest. We also had various cheeses and olive chips. Plus a glass of Rosenblum syrah. Ahh. . .

We are having burgers from Biff Buzby Burgers off of Toepperwein in San Antonio, 1/4 lbs not the 3lbs red baron. Whew. Served with Mexican style beans.





Yes if I ever moved I would miss the chili for sure. Did you ever try Bobs burgers on central when you lived out here?


Have not been to cc pizza in a long time but alfredo pizza sounds good.
