I made Thai Thighs (chicken) in the crockpot yesterday for noon dinner so we'll have those again tonight. They are yummy. Served on rice and you top them with peanuts and cilantro. That and mixed veggies (steamed zucchini, yellow squash & carrots) and a pineapple, blueberry and banana fruit salad will do it.

I cut up a bunch of onion, yellow potatoes, sweet potatoes and carrots, put them in a roasting pan and put a seared roast on top. Easy and all in one. Hope it works.

Marinated chicken breasts on the George Foreman (I really wish there were a better way to cook them - the honey in the marinade causes them to burn a little before they're fully cooked) and stuffing.
